Throughout the process, the chickens were held down firmly with an iron rack to prevent them from moving around in the boiling liquid, ensuring they cooked evenly.
After bringing the liquid to a boil and reducing the heat to low, she had to maintain a gentle simmer, just below a full rolling boil.
The three-yellow chickens Nan Zhi had selected were neither large nor old, so they only needed to be braised for three to four hours.
